great peruvian dish

Nicky and Mari had us over for dinner last night, and we had a delicious peruvian dish - causa. I can't wait to make it at home! Here's the recipe:

CAUSA DE ATUN
Ingredients:
    •    1 kg (2.2 lb) of yellow potato
    •    2 limes
    •    1 tablespoon of yellow chili/pepper, blended or ground
    •    1/2 kg (1 lb) of fresh tuna or 2 cans (180 g, 6 oz) of tuna in vegetable oil
    •    1/2 red onion, chopped
    •    Tomatoes, cut in little squares
    •    2 avocados
    •    2 cups of mayonnaise
    •    Parsley, to decorate
    •    8 black olives
    •    2 hard-boiled eggs
    •    Optional: bell pepper stripes to decorate
    •    Salt
    •    Pepper

Preparation: Cook the potatoes in water with salt. Peel and press them. Knead and season with salt, white pepper, lime, yellow chili/pepper. Mix the tuna with the mayonnaise and the chopped onion. On a plastic sheet, spread the potato dough. Over the dough, put the tuna, tomatoes, avocado slices and roll it like a swiss roll. Top with boiled eggs, olives and bell pepper. Refrigerate for a few hours and slice just before serving.
